Pepper Chicken - A Weeknight Favourite

Simple, Delicious, and a Family Staple

We all know how hectic weekdays can get, especially when everyone’s busy with work, school, and activities. That’s why I’m always on the lookout for recipes that are quick, easy, and of course, packed with flavour. I found this particular recipe on Instagram a while back, and it has since become a staple in our house. It’s so simple to make, and it’s one of those dishes that tastes even better than it looks, perfect for those busy weeknights when you want something wholesome but don’t have hours to spend in the kitchen.

I love how versatile this dish is, too. You can tweak it depending on what’s in the fridge, but it never fails to deliver that “yum” factor! Trust me, after you try this, it’ll be on repeat in your home just like it is in ours.

Pepper Chicken

Ingredients

• 5 tbsp ghee (clarified butter)
• 3 cups onions, chopped
• 1 kg chicken, curry cut
• 5 green chilies, slit
• 1 tbsp grated ginger
• Salt, to taste
• 2 tbsp black pepper powder
• Coriander leaves, for garnish

Instructions

1. Heat the ghee in a Brass Chef Pan.
2. Add the chopped onions and sauté until they turn translucent.
3. Layer the chicken pieces on top of the onions, then add the slit green chilies, grated ginger, and salt as needed.
4. Cover with a lid and cook on low heat for 20-25 minutes.
5. Stir in the black pepper powder and cook for another 10 minutes, stirring frequently.
6. Garnish with fresh coriander and serve hot with paratha.
